Photographer: David Simkin's Brighton Photographers 1841-1910 website is a fund of helpful information. According his Directory of Photographic Studios in Brighton & Hove 1841-1910 Henry Spink was at 109 Western Road Brighton from 1865-1894.
Fashion: From the detail on ladies' dresses provided by Roger Vaughan's site I would say her clothes look like those of the ladies from 1871. The lady on the right in this photo has an almost identical hairstyle and wears a similarly tasselled dress and jabot plus brooch.
Card: A date of the early 1870s would also fit with the square corners which don't fit with the 1890s. And also there seem to have been other photos of a rustic or outdoor nature being taken in the early 1870s - see Roger Vaughan's list.
